Appassimento, meaning “withering”, is an ancient, artisanal winemaking technique originated in Italy and practiced since Roman times. The process involves drying the grapes before pressing, which concentrates the flavors and aromas, and softens the tannins resulting in a wine with enhanced complexity and richness.

Winemaking in Salento dates back millennia, to 6th century BC when seafaring Illyrians brought Primitivo vines from their native homeland in modern-day Croatia to the region. Two centuries later, the Greeks arrived with Negroamaro and introduced the first winemaking techniques – including the Alberello Pugliese, a vine-training method that allows the grapes to flourish in Salento’s hot Mediterranean climate. By 3rd century BC, the Romans had taken the reins to continue the tradition and refine techniques leading to Salento being nicknamed “the winery of Italy”.

Once known primarily for bulk wine production, the late 20th century saw Salento transform into a region celebrated for high-quality, distinctive wines thanks to forward-thinking winemakers who married modern techniques with time-honored traditions. Today, Salento is a must-see destination for wine enthusiasts.
