Nestled in the foothills of the Alps, with views of the soaring Dolomites, the Terre di Valfredda (“Cold Valley”) vineyard provides a perfect east/west exposure and natural protection by the surrounding mountains – perfect for ripening Pinot Grigio. The traditional Pergola Trentina system shields the grapes from excessive sunlight and wind, while every stage – from bud selection and fruit thinning to hand harvesting – is carefully managed to ensure the grapes highlight the finest characteristics of the terroir.

The vinification process was developed under the direct supervision of the legendary Riccardo Cotarella and his technical team. A Wine Enthusiast “Winemaker of the Year” and Gambero Rosso “Best Italian Winemaker”, Cotarella has been lauded as “one of the most influential wine personalities in the world” by Robert Parker.

Tasting Notes: A complex, yet delicate, elegant and intriguing wine with aromas and flavors of Amalfi lemon, star fruit, wet slate, tangerine zest, jasmine, and hints of sweet almond with a crisp, dry-yet-fruity body and a smooth, refreshing finish with suggestions of apricot fruit leather, poached apple, and tarragon. Crisp and easy drinking with a nice mineral element.

Pairing Suggestion: The bright acidity cuts through buttery sauces, making it an ideal match for oysters, clams, shrimp, and scallops, as well as sea bass or snapper prepared with lemon and herbs, and sushi, sashimi, and ceviche. Pair with creamy and vegetable-based pastas, risotto and polenta dishes typical to northern Italy, and charcuteries with cured meats and cheeses like mozzarella, burrata, provolone, pecorino, and asiago. The bright, fruity, zesty character brings a refreshing balance to rich dishes like lobster mac ‘n cheese, carbonara and cacio e pepe.
