Crafted in a natural, or non-interventionist, style of winemaking – Primo Monte is a refined and complex example of natural winemaking at its finest.

The process begins in the vineyards of Abruzzo, a visually stunning region with rugged terrain that boasts mountains, seashores, and forests. Here, each grape is handpicked with care, prioritizing diligence over haste. After destemming and pressing, the juice undergoes spontaneous – also known as “wild” – fermentation, which relies on the indigenous yeasts naturally present in the vineyard, on the grapes, and even in the air of the winery, rather than commercial yeasts. This spontaneous fermentation is credited with adding intensity, complexity, and additional flavors to the wine.

Unlike traditional white wines, Primo Monte undergoes the same maceration process as red wine with the grapes being fermented with their skins. This skin contact imparts a vibrant orange hue, tannins, and distinctive flavors – creating a complex, robust wine that is neither red nor white, but a type entirely its own.

Finally, the wine is neither filtered nor fined prior to bottling – processes that remove yeast and other particles naturally present in the wine. Natural wines forgo these steps to not remove any natural flavors and aromas and maintain the appealing texture and mouthfeel it gives the wine. As an added bonus, unfiltered and unfined wines are naturally vegan-friendly.

Vinification: After pressing the fermentation begins naturally and lasts for over 60 days, during which the wine undergoes an intense maceration typical of red wine production. The extended skin contact allows the grapes to release their characteristic color and aromas and the wine to gradually develop its vibrant orange hue. The wine is not filtered prior to bottling, but rather simply decanted, contributing to its natural character and maintaining more of its original flavors and textures.

Tasting Notes: The aromatic bouquet reveals delicate floral notes, fruits, candied citrus, and hints of Mediterranean herbs. On the palate the wine is smooth with refreshing acidity and flavors of lemons and limes, green apples, flowers, and hints of ripe stone fruits anchored by mineral undertones. The finish is persistent, long-lasting, and incredibly elegant, making this a refined and complex expression of natural winemaking.

Pairing Suggestion: Pairs wonderfully with a variety of dishes across different cuisines. For a classic Italian match, pair with Pecorino-based pasta dishes like Cacio e Pepe or a traditional antipasti of cured meats, semi-soft and hard Italian cheeses, grilled artichoke hearts, olives, and roasted vegetables. The acidity provides a counterbalance to the richness of seafood pastas, roast chicken, pork tenderloin and white pizzas, and it also works well with lighter seafood dishes, white fishes, salads, pesto, and plant-based meals. Spanish tapas are a wonderful choice as the acidity complements the variety of flavors.

The process starts in the vineyard – vineyards once abandoned by their owners in search of new prospects. Passione Natura steps in as a dedicated caretaker, restoring these lands to their former vitality through deep knowledge of the terroirs, microclimates, viticulture, and characteristics of the vines. The vines are nurtured with organic and biodynamic farming practices, honoring both nature and tradition.

This natural philosophy continues in the winery, where every stage of vinification is overseen with meticulous care to ensure the purity and integrity of the wine.
